    1 tablespoon butter

    ¾ cup egg whites

    1 large egg

    2 ounces Bel Gioioso mascarpone cheese

    ½ teaspoon dried herbs, your choice

    salt and black pepper to taste

    Instructions

    Melt butter in medium pan over medium-high heat. Mix remaining ingredients in a small bowl. When the butter stops foaming, pour egg mixture into pan. Cook until eggs are just barely set, stirring occasionally. Take them off the heat when they are still a little wet.
