    2 large or 4 small pork chops

    1 tablespoon soy flour

    ¼ teaspoon salt

    ¼ teaspoon pepper

    ½ cup red wine

    2 teaspoons Italian seasoning, Herbs de Provence, or steak seasoning

    1 onion, thickly sliced (optional)

    2 apples or pears, cored and thickly sliced (optional)


    Trim the fat from the chops. Heat a bit of the fat in a large pan over medium-high heat.
    Mix flour, salt, and pepper in a shallow plate or pie pan. Place the chops in the flour mixture and turn to coat both sides.
    Place herbs on a plate and place one side of chops on the plate pressing down to coat with seasoning.
    Place chops, seasoned side down, in the hot pan until browned. Sprinkle top of chops with remaining herbs and turn.
    When browned, add the wine along with any leftover flour mixture and herbs.
    You may add sliced onions and apples or pears at this point; however they are not included in the carb count for this dish. They’ll flavor the dish, and your dinner companions will be able to enjoy them. Turn the heat to low, cover and cook for 25 minutes.
