    This spread keeps well in the fridge and can be used in so many ways that I like to make a double batch and use leftovers for a snack (spread on pork rinds, radish slices, or cucumber slices) or to share with someone I love ?

    Ingredients

    1 pound canned salmon

    1 tablespoon horseradish

    1 teaspoon fresh lemon juice

    2 tablespoons mayo

    1 tablespoon fresh parsley, finely diced

    8 ounces Bel Gioioso mascarpone cheese

    10 inner lettuce leaves

    Instructions

    Mix all ingredients except lettuce in a small bowl. Place a dollop of salmon spread on each lettuce leaf. Roll and eat. If you’re saving half the salmon spread for another meal, then use only five lettuce leaves.
