    You can choose any type of sausage as long as it contains no carbs. If your sausage is more than zero carbs per serving be sure to add to the carb count to this dish.

    Ingredients

    1 pound sausage

    1 cup frozen chopped spinach, thawed and squeezed to remove as much moisture as possible

    4 ounces Bel Gioioso mascarpone cheese

    1 cup egg whites

    1 cup shredded cheese

    ½ teaspoon each salt and pepper

    Instructions

    Preheat oven to 350°F.
    Brown sausage and drain off grease.
    Oil or butter an 8-inch x 8-inch baking pan. Press sausage into the bottom of the prepared pan.
    Evenly distribute spinach over the sausage, and then distribute the mascarpone cheese on top of the spinach. Pour eggs over the mascarpone, then top with shredded cheese.
    Bake for 20 to 30 minutes, until eggs are just barely set. They should still jiggle like Jell-O but not be liquidy. Let cool for at least 5 minutes before serving.
